Grilled Corn Summer Salsa

Serves 4


•4-6 large tomatoes

•1 ear of corn kernels, grilled

•1/2 red onion, diced

•1 avocado, diced

•1-2 sweet bell peppers or hot peppers

•Juice of 1 lime

•Chopped parsley and cilantro

Preparation: Grill corn until soft. Remove corn kernels and place them into a bowl. Combine grilled kernels with tomatoes, onion, peppers, avocado, parsley, cilantro and lime.

Enjoy with baked corn chips, with salad or next to your favorite grilled item!
