Red Bean Macaroni Salad (Serves 4)


• 1 cup dry macaroni

• 1 15.5oz can small red beans

• 2 stalks celery, chopped

• 1 tomato, diced

• 1/2 cup cucumber, diced

• 1/2 cup onion, diced

Preparation:In a pot, boil 1 cup dry cavatappi or other macaroni until pasta is very soft. Rinse pasta under cold water and drain. Dice tomato, cucumber, celery, and onion. Rinse and drain 1, 15.5oz can of small red beans. In a large bowl, mix together pasta, vegetables, and small red beans.
