Tomato, Spinach, and Mozzarella Cheese Panini

"Panini" is an italian word meaning small breads. Traditionally a panini is a grilled sandwich made from unsliced ciabatta, or italian bread. Today, the word is used broadly to refer to grilled or toasted sandwiches. This recipe uses classic Italian ingredients, but is toasted in the oven, making it one of the easiest paninis you'll ever make!

Tomato, Spinach, and Mozzarella Cheese Panini (Serves 1)

Ingredients:

•2 slices Italian bread

•1 sliced tomato

•spinach leaves

•½ oz shredded mozzarella cheese

Directions: Heat oven to 350 degrees F. Toast two slices of Italian bread on top rack for two minutes. Turn the bread over, and place tomato slices on the bread. Cook two minutes. After two minute, place spinach leaves over tomato, and sprinkle with mozzarella cheese. Cook until cheese is melted. Pull Panini from the oven, and place slices together to make a sandwich. Cut in half, enjoy.
