Salsa Fresca is a simple recipe that you can use in a variety of ways. It is great as a topping for chicken or fish, mixed into a frittata, or used as a base for guacamole. Salsa Fresca is also delicious plain with tortilla chips! ¡Buen provecho!

Serves 4

Ingredients:

•4 medium Tomatoes, diced

•1 small onion, diced finely

•1/2 cup chopped fresh cilantro, or parsley

•1 tablespoon hot sauce

•1 tablespoon canola oil

•1 tablespoon lime juice, or lemon juice

•dill weed (to taste)

•salt (to taste)

•pepper (to taste)

Directions: Dice 4 tomatoes and 1 onion. Finely chop 1 bunch fresh cilanto or parsley. Mix ingredients together in a medium sized bowl. In a small mixing bowl combine 1 tablespoon canola oil with 1 tablespoon lime juice, and 1 tablespoon of your favorite hot sauce. This recipe creates a mild salsa. For spicier salsa add 2 tablespoons or more of your favorite hot sauce. Add dill weed, salt, and pepper to taste. Whisk dressing with a fork, and pour over the vegetables and stir salsa.
